As a Paediatric Allergy Dietitian, I am always thinking of ways that young children with multiple food allergies can have snacks which are allergy free as well as easy to make (bonus for the parent!). This afternoon I did some baking with my kids and we came up with this slice with ingredients we had in the cupboard. Took about 5 minutes to make and 20 minutes in the oven! Easy!
Here is the recipe:
Coconut and Date Slice
6 Gluten Free Weetbix, crushed (yes - there is now a gluten free Weetbix variety!)
1cup brown rice flour
1 cup desiccated coconut
2 tsp Gluten free baking powder (rice flour based)
1 cup dates chopped
1/2 cup brown sugar
80g nuttalex
Method
Step 1
Pre heat oven to 180degrees. Place crushed weetbix, rice flour, coconut, baking powder and brown sugar in a bowl and combine.
Step 2
Place chopped dates and butter into a microwave safe dish and microwave for approx. 2 mins, stirring every 30 seconds until dates are soft and mixture is combined
Step 3
Add wet date and nuttalex mixture to dry mix. Combine and place in slice tray lined with baking paper
Bake in 180 degree oven for approx. 20 mins. Let cool before cutting up

Tips:
- Slice comes out a bit crumbly - you could always add egg (if not allergic) or egg replacer to bind it together. Kids still love it though!
- Packed full of energy active kids - serve as a treat rather than an every day food. For those children who are faltering on their growth charts and need to catch up - these are perfect!

- Good source of fibre with the Weetbix and brown rice flour
